Dung K'No Commune is centered on a small village in Lam Dong province, in Vietnam's central highlands. Farmers here average 1.1 hectares and grow coffee among other crops such as persimmon, jackfruit, macadamia, and avocado. Daily harvests go to the Duc Trong wet mill, where the coffee is washed and then dried on raised beds or patios for about 5-7 days.

Lam Dong is a mountainous, 70% forested province with mild, steady temperatures and predictable rainy seasons. Arabica growers here mostly plant Catimor, along with some Bourbon and Typica.

Vietnam is the world's second-largest coffee producer, and about 97% of its exports are robusta. This lot comes from the small but growing pocket of specialty arabica around Dalat.

how to brew it

here's how we brew it: 2 tablespoons (about 10g) of coffee per 6oz cup of water, a medium grind, water just off the boil.

using a drip machine? just keep the same ratio and use fresh cold water.
