it comes from COMSA (cafe organico marcala), a cooperative started in 2000 by 62 honduran farmers who set out to move their farms from conventional to organic growing. they earned organic certification in 2001 and fair trade certification in 2006, and the fair trade premium helps pay local teachers' salaries and buy school supplies.

In 2000, 62 Honduran coffee farmers joined together to convert their farms from conventional to organic production and formed COMSA (Cafe Organico Marcala, S.A.). In 2001, with support from the Funder foundation, COMSA earned organic certification from Bio Latina, which opened up more international buyers and better prices for its members.

COMSA was granted Fair Trade certification in February 2006. The cooperative uses the Fair Trade premium to fund social projects, including teachers' salaries and school supplies.

Grown at around 1220 meters: Bourbon, Catuai, Caturra, and Typica. Fully washed and mechanically dried.

how to brew it

here's how we brew it: 2 tablespoons (about 10g) of coffee per 6oz cup of water, a medium grind, water just off the boil.

using a drip machine? just keep the same ratio and use fresh cold water.
