a natural-process ethiopian, so this one is all fruit: blackberry and tangerine, with a lively, juicy finish.
it comes from the shakiso washing station in guji, a remote and heavily forested corner of southern ethiopia. about 137 farmers bring their cherry to shakiso, each farming around 2 hectares. the cherries dry whole on raised beds, which is where all that fruit comes from.
if you've only had washed ethiopians, this is a very different cup. try them side by side.

how to brew it
here's how we brew it: 2 tablespoons (about 10g) of coffee per 6oz cup of water, a medium grind, water just off the boil.
using a drip machine? just keep the same ratio and use fresh cold water.
