it comes from the alto san juan micromill in tarrazú, run by diego abarca, a fourth-generation coffee grower. diego took a plot of his family's land and built it into his own farm, finca san calletano, on a hilltop that's often in the clouds. this lot was fermented anaerobically and then dried as whole cherries, which pushes the fruit and acidity even further.

Alto San Juan Micromill is owned by Diego Abarca, a young, fourth-generation producer who took a plot of land given to him by his father and turned it into his own coffee business. His yields have grown every year, giving him room to experiment with processing and keep tight quality control.

Diego owns and operates Finca San Calletano, a hilltop farm in Tarrazú, Costa Rica's best-known coffee region. It is often wrapped in low clouds and is split into separate lots for crop management and traceability. Grown at around 1600 meters, Catuai variety.

This lot was intentionally fermented anaerobically (sealed in containers after harvest) before being dried as a natural, which tends to intensify fruit and acidity and add a little body. Costa Rican micromills typically produce fewer than 1,000 bags a year and offer a high level of traceability.

how to brew it

here's how we brew it: 2 tablespoons (about 10g) of coffee per 6oz cup of water, a medium grind, water just off the boil.

using a drip machine? just keep the same ratio and use fresh cold water.
