ethiopia sidamo shoye
about ethiopia sidamo shoye
we're a big fan of ethiopian coffees here, and this is a classic washed sidamo: clean, floral, and bright.
peach comes first, then a lemongrass brightness, and it finishes like black tea. the body is light and tea-like. when we say 'bright', think lemon rather than orange.
it comes from family-owned farms organized around the shoye cooperative in the dale district of sidama, grown around 1800 meters from ethiopian heirloom varieties.

how to brew it
here's how we brew it: 2 tablespoons (about 10g) of coffee per 6oz cup of water, a medium grind, water just off the boil.
using a drip machine? just keep the same ratio and use fresh cold water.
